This cuvée, a tribute to our beautiful village of Gonfaron, known to be the land of “flying donkeys”, is a symphony of fruit aromas.
Vinification & aging
Mechanical harvesting. Pre-fermentation cold maceration. Fermentation during 3 weeks in temperature-controlled vats at 15°.
Average age of vines
HVE, Organic fertilization, Grassing.
Its pale color reveals a nose of currants and white flowers. There is a lot of silkiness in the mouth as well as a certain sweetness. Empyreumatic and almond notes complete the aromatic register.
